In 2002, the Valentini family continued their tradition by establishing Bocale, a winery in Montefalco. "Bocale" refers to a two-liter mug of wine or olive oil, and it's also the family nickname. Their Montefalco Rosso and Montefalco Sagrantino wines blend innovation with tradition, respecting environmental cycles and handcrafted processes to create natural, personality-filled wines.
The company covers 10 hectares, of which 6 are vineyards, and has an average annual production of 40,000 bottles. The vineyard is treated with natural grass regeneration techniques (land planting), using only organic and mineral fertilizers without the use of chemical products or herbicides; The wines are all-natural and homemade with an artisan process that reflects regional characteristics. The fermentation takes place exclusively with native yeasts. The wine is produced without microfiltration and thermal stabilization. The aging takes place in French oak barrels The wines are sold only after a thorough process of aging in the bottle has occurred. The energy used for the entire production comes from renewable sources using a photovoltaic system.

Aromatic & Supple
Dry full-bodied polished red with aromas of ripe red fruit, violets, baking spice, and a hint of new leather. Reflecting the nose, the dense, supple palate doles out fleshy morello cherry, raspberry jam, and star anise framed in rounded, fine-grained tannins.

Grape variety: Sagrantino, the native grape variety of this small and special region.
Description: A young grappa. Clear, limpid, crystalline in appearance. On the nose, a perfume of herbs, flowers and fruit (blackberry, currant). On the palate full, round and delicately aromatic with fruit following through into a pleasantly persistent finish.
Serving suggestions: Classic grappa pairings are after-dinner treats like fruit platters and desserts. Grappa can also be a lovely combination with sorbet and chocolates - the latter typically served in chunks. Young grappa will go well with anything almond based, such as almond biscotti, almond tart, or cake and brownies that have a strong almond flavour.
