The production of Maison AUDRY cognacs follows a careful, artisanal process that begins with the selection of grape varietals and the use of double distillation in traditional copper Charentais stills. This method, governed by strict regulations and carried out between October and March, preserves the purity and elegance of the spirit. Once distilled, the eaux-de-vie are aged in French oak barrels, starting in new casks before being transferred to older ones for long maturation. This extended ageing—often well beyond legal minimums—allows the cognacs to develop remarkable aromatic richness and a signature smooth, velvety mouthfeel. The olfactory notes are rich and complex, with rancio, cinnamon, vanilla, old oak, cigar box, and fruity nuances. Its palate is delicate and lively, revealing nuts, prunes, coffee beans, and cocoa, with a long and complex finish.
This cognac undergoes a rapid passage in new barrels to preserve its natural aromas before aging in old barrels in a humid cellar. A blend of Petite and Grande Champagne eaux-de-vie, reduced naturally to 43% ABV, it contains no additives or sugar, ensuring an authentic, pure taste.
