    For every vintage of Vigna Vecchia the family sets aside exactly 1,330 bottles in their cellar to age and release in September of the fifth year after harvest. This particular 2015 vintage is a product of the 2009 harvest season. This wine is made from the oldest vines of the entire vineyards, which are around 60 years old and have a higher density of growth then the younger vines. This wine is derived from just three plots that sit upon the Valdivilla Hills, which cover a hectare of land. This being the most coveted and complex wine in the family, it makes sense that this hectare of land is dominant with limestone soils and the perfect south exposure to the sun, both contributing to the wines signature freshness and minerality.

    Intense, ruby red colour. It fills your nostrils with sensations of cherry preserve, caramelized blackberries and a potpourri of rose petals and dried violets. Balsamic hints of resin and musk, and spicy ones of cloves, cinnamon and star anise complete the bouquet. At first it is powerful and warming on the palate, but the sensation of high alcohol is immediately counterbalanced by a juicy freshness and nice tanginess which, alongside quite evident tannins, give the taste vigour and energy. Delicious hints of cherries and berries preserved in alcohol make the long finish particularly pleasing.

The vinification is a very specific process that occurs over 60 days in pressurized steel autoclaves. This creates a very refreshing wine with elegant perfumes. Dominant notes of elderflower, musk, and peach with a distinctive finish of lemon and sage. This is the ideal charcuterie wine, and is perfectly paired with seasonal fresh fruit, artisanal salami, and aged cheese.

    A Barolo, born from the overwhelming desire of Domenico to try his hand at new adventures, the “wild aeroplane”, as he used to be called by his father, in 2006 he chose to branch out from the town of Monforte and strike out in a new territory: Serralunga D’Alba. This wine is produced with Nebbiolo grapes deriving from a vineyard collocated in Serralunga d’Alba and it distinguishes itself from the other kind of Barolo wines produced in this cave both for its characteristics and for its label: 6 different labels that represent the Aeroplan Servaj lay inside a wood packaging, while outside there is the legend of the wine’s name. Elegant Barolo wine with an intense and transparent ruby red colour; the smell of it emanates a various and intense bouquet with the floral aroma of violet, rose, blueberries, raspberries, and spices. Wine of great balance and persistence that combines perfectly with red meats, and seasoned cheeses. It has a good capacity of aging, too.
