This one-of-a-kind wine is created by adding wildflower honey that is harvested at the winery to the fermentation process. The bacterias that promote alcoholic fermentation have a frenzy with the honey, and Essentia is born. Deep intensity and complexity are met with minerality and a soft finish. Meant to be enjoyed as an aperitif.

Delicate ethereal notes and bright gold with amber reflections, with presenting scents of mandarin, candied fruit, chamomile, honey and dried apricots. Both fermentation and vinification are done using stainless steel, so you get this brilliant fresh minerality that brightens the entire palate while still delivering all that you want from a classic Chardonnay. Notes on both the nose and palate are reminiscent of papaya, lemon balm, dried pineapple, wet flint rocks, peach and honeysuckle.

A Barolo, born from the overwhelming desire of Domenico to try his hand at new adventures, the “wild aeroplane”, as he used to be called by his father, in 2006 he chose to branch out from the town of Monforte and strike out in a new territory: Serralunga D’Alba. This wine is produced with Nebbiolo grapes deriving from a vineyard collocated in Serralunga d’Alba and it distinguishes itself from the other kind of Barolo wines produced in this cave both for its characteristics and for its label: 6 different labels that represent the Aeroplan Servaj lay inside a wood packaging, while outside there is the legend of the wine’s name. Elegant Barolo wine with an intense and transparent ruby red colour; the smell of it emanates a various and intense bouquet with the floral aroma of violet, rose, blueberries, raspberries, and spices. Wine of great balance and persistence that combines perfectly with red meats, and seasoned cheeses. It has a good capacity of aging, too.
