Born from an old recipe inspired by Ermanno Paesani’s passion for blending herbs and roots, Paesani Fernet is a bitter liqueur crafted with carefully selected herbs, spices, and roots. These ingredients are left to infuse for around 60 days, allowing the extraction of their full aromatic and flavor profile, resulting in a truly unique expression.

On the nose, it reveals complex herbal and spiced aromas with hints of bitter roots. The palate is bold and structured, showcasing layers of bitterness balanced by subtle herbal sweetness and a long, lingering finish. Traditionally macerated in cold alcohol, it is a quintessential Italian bitter, perfect as a digestif or in classic cocktails.

Run by the Paesani family since 1961, this artisanal fabbrica in Collevecchio, Abruzzo, produces hand-crafted amari and liqueurs that reflect the region’s rich traditions. Overlooking the Gran Sasso d’Italia, the highest peak in the Apennines, the family continues to source fruits, herbs, and botanicals—whether cultivated or foraged—to create a lineup that balances authenticity with a refined, contemporary style.
