About the Winery
Capanna
The Capanna farm, owned by the Cencioni family since 1957, is situated in the Montosoli area, to the north of Montalcino. It was founded by Giuseppe Cencioni and, helped by his sons Benito and Franco, it was one of the first farms of the modern period of Brunello. They started bottling their own wines in the 1960's and after Brunello di Montalcino was granted DOC status in 1966, Giuseppe was one of the 25 founders of the Consorzio del Vino Brunello di Montalcino.

We are pleased to announce the latest addition to the Sojourn portfolio, the inaugural release of the Brut Sparkling wine. This Brut (dry) wine was produced via Méthode Champenoise, the traditional method by which Champagne is made, in which the wine is fermented a second time in bottle. This secondary fermentation creates the delightful effervescence we so closely associate with celebration. The crafted this wine with merriment in mind. It offers aromas of crisp yellow apple, ripe pear and toasted brioche, alongside a luscious palate with flavors of lively lemon, panna cotta, soft spice and a fine mousse.

This red in the Volpe Pasini family has the most savoury notes due to the contribution of the Cabernet Franc. The elegant herbaceousness meets a refined and elegant bold tannin, leaving us with a very complex, full-bodied wine that is an endless discovery. While its young, we have tight structured tannins and is ruby red in colour. With age it stays bold but becomes velvety and elegant turning almost amber in colour. This wine is intentionally prolonged in the maceration process to accentuate the juicy and savoury complexity qualities.

This premium Cabernet Sauvignon received a lot of attention during the winemaking process. It's made only from selected grape berries and went through a malolactic fermentation in wooden casks followed by 16 months of barrel aging.
Deep lilac colour, very pleasant oakiness, suede leather, blackcurrant, black cherry and some ripe figs dominates the nose. The taste is well balanced with black pepper, cloves, silky dark chocolate and blackcurrant. This full bodied wine will be a great companion with your Steak, Lamb, Osso-Bucco and a variety of BBQ items. It drinks well already, but has a great aging potential as well up to 10 years.
